Clean swaps

How we upgrade the restaurant version with better ingredients.

  • Canola oil (typical restaurant) → Avocado oil — Avoids industrial seed oils and provides heart-healthy monounsaturated fats.
  • Nitrate-treated meats → Nitrate-free organic meats — Eliminates chemical preservatives and nitrates commonly found in deli meats.
  • Refined white flour wrap → Sprouted grain tortilla — Provides complex carbohydrates and higher fiber content for sustained energy.

Instructions

  1. Wash and chop the cucumbers, tomatoes, and lettuce into bite-sized pieces.
  2. In a heavy skillet, lightly sear the organic pepperoni and prosciutto with 1/2 tbsp avocado oil over medium heat until slightly crisp.
  3. In a small bowl, whisk together the remaining avocado oil, balsamic vinegar, oregano, and garlic powder to create a clean vinaigrette dressing.
  4. Lay the sprouted grain tortilla flat and spread a thin layer of the herbal dressing across the center.
  5. Layer the warm meats, parmesan cheese, and fresh vegetables evenly over the dressing.
  6. Fold the bottom and sides of the tortilla inward and roll tightly from bottom to top.
  7. Optionally, place the wrap seam-side down in a dry skillet for 1 minute per side to toast the exterior.
