Ingredients
- 2 lbs organic Yukon Gold potatoes, cubed into 1-inch pieces
- 1/2 cup avocado oil
- 1 tsp sea salt
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 lb organic grass-fed ground beef
- 1 small yellow onion, finely diced
- 1 cup shredded organic sharp cheddar cheese
- 1 tsp ground cumin
- For the sauce: 3 tbsp avocado oil, 2 tbsp plain Greek yogurt, 1 tsp Dijon mustard, 1 clove minced garlic, 1/4 tsp cayenne pepper

Instructions
- Preheat oven to 400F (200C) and line a large baking sheet with parchment paper.

- Spread potatoes on the baking sheet and roast for 25-30 minutes, flipping halfway through, until golden brown and crisp.
- While potatoes roast, brown the ground beef and diced onion in a skillet over medium heat until meat is fully cooked; drain any excess fat.
- Season the meat mixture with cumin and additional salt to taste.
