Clean swaps
How we upgrade the restaurant version with better ingredients.
- Canola or vegetable oil (typical restaurant) → Avocado oil — Eliminates inflammatory industrial seed oils.
- Refined sugar or high fructose corn syrup → Medjool date paste — Replaces empty calories with fiber-rich, whole food sweetness.
- Conventional beef stock (with additives) → Organic bone broth — Avoids hidden preservatives and artificial flavorings.
Instructions
- Pat the beef roast dry and season thoroughly with sea salt and black pepper.
- Heat avocado oil in a heavy Dutch oven over medium-high heat.
- Sear the meat on all sides until deeply browned, then remove from the pot.
- Add diced onion, minced garlic, chipotle, cumin, and oregano to the pot; sauté for 2 minutes.
- Deglaze the pot with apple cider vinegar and lime juice, stirring to loosen any browned bits from the bottom.
- Return the beef roast to the pot and stir in the medjool date paste and bone broth.
- Cover and braise in a 300°F oven (or simmer on low heat) for approximately 2.5 to 3 hours until the meat is tender enough to shred.
- Remove from heat, shred with two forks, and toss lightly to incorporate the remaining cooking juices.
