  • 1 tsp chipotle powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp sea salt

Clean swaps

How we upgrade the restaurant version with better ingredients.

  • Canola or vegetable oil (typical restaurant) → Avocado oil — Eliminates inflammatory industrial seed oils.
  • Refined sugar or high fructose corn syrup → Medjool date paste — Replaces empty calories with fiber-rich, whole food sweetness.
  • Conventional beef stock (with additives) → Organic bone broth — Avoids hidden preservatives and artificial flavorings.

Instructions

  1. Pat the beef roast dry and season thoroughly with sea salt and black pepper.
  2. Heat avocado oil in a heavy Dutch oven over medium-high heat.
  3. Sear the meat on all sides until deeply browned, then remove from the pot.
  4. Add diced onion, minced garlic, chipotle, cumin, and oregano to the pot; sauté for 2 minutes.
  5. Deglaze the pot with apple cider vinegar and lime juice, stirring to loosen any browned bits from the bottom.
  6. Return the beef roast to the pot and stir in the medjool date paste and bone broth.
  7. Cover and braise in a 300°F oven (or simmer on low heat) for approximately 2.5 to 3 hours until the meat is tender enough to shred.
  8. Remove from heat, shred with two forks, and toss lightly to incorporate the remaining cooking juices.
