Chili's-Style Southwest Eggrolls
This version swaps industrial seed oils for avocado oil and uses organic whole foods to provide a nutrient-dense alternative to the restaurant classic.

Ingredients
- 1 cup organic black beans, rinsed and drained
- 1 cup organic sweet corn kernels
- 1 organic red bell pepper, diced
- 1 organic jalapeño pepper, seeded and minced
- 1/4 cup organic red onion, finely diced
- 2 tbsp avocado oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 2 tbsp fresh cilantro, chopped
- 8 organic whole wheat eggroll wrappers
- 1 tsp raw honey

Instructions
- In a large skillet, heat 1 tbsp of avocado oil over medium heat. Add the diced onion, red bell pepper, and jalapeño.
- Sauté the vegetables for 5-7 minutes until they begin to soften.
- Add the sweet corn, black beans, cumin, smoked paprika, garlic powder, and honey. Stir to coat evenly.
- Cook for another 3-4 minutes, then stir in the fresh cilantro. Remove from heat and drain any excess liquid to ensure a crispy texture.
- Lay out the eggroll wrappers. Place approximately 1 tablespoon of filling in the center of each wrapper.
- Moisten the edges of the wrappers with water, fold them into half-moons, and pinch the edges firmly to seal.
- Brush the outside of the eggrolls lightly with the remaining 1 tbsp of avocado oil.
- Heat a cast iron skillet over medium-high heat. Sear the eggrolls for 3-4 minutes per side until golden brown and crisp.
