Chili's-Style Southwest Eggrolls

  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 2 tbsp fresh cilantro, chopped
  • 8 organic whole wheat eggroll wrappers
  • 1 tsp raw honey
  • Salt and cracked black pepper to taste

Instructions

  1. In a large skillet, heat 1 tbsp of avocado oil over medium heat. Add the diced onion, red bell pepper, and jalapeño.
  2. Sauté the vegetables for 5-7 minutes until they begin to soften.
  3. Add the sweet corn, black beans, cumin, smoked paprika, garlic powder, and honey. Stir to coat evenly.
  4. Cook for another 3-4 minutes, then stir in the fresh cilantro. Remove from heat and drain any excess liquid to ensure a crispy texture.
  5. Lay out the eggroll wrappers. Place approximately 1 tablespoon of filling in the center of each wrapper.
  6. Moisten the edges of the wrappers with water, fold them into half-moons, and pinch the edges firmly to seal.
  7. Brush the outside of the eggrolls lightly with the remaining 1 tbsp of avocado oil.
  8. Heat a cast iron skillet over medium-high heat. Sear the eggrolls for 3-4 minutes per side until golden brown and crisp.
