  • 3 large ripe tomatoes
  • 8 oz fresh mozzarella cheese, sliced
  • 1/4 cup fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 1 tsp balsamic glaze
  • 1 pinch flaky sea salt
  • 1 tsp cracked black pepper

Instructions

  1. Wash and slice the tomatoes into thick rounds.
  2. Slice the mozzarella cheese into discs of similar thickness to the tomatoes.
  3. Arrange tomato and mozzarella slices alternately on a large platter, overlapping slightly.
  4. Tuck fresh basil leaves between each tomato and mozzarella layer.
  5. Drizzle the salad generously with extra virgin olive oil and balsamic glaze.
  6. Sprinkle with flaky sea salt and cracked black pepper before serving immediately.
